We are particular about the crunchy texture and use only the freshest eggs.
It uses Shiraito Sake Brewery's "Hojun" sake, pressed with a Haneki press, and Kanoo Soy Sauce's "Sumire" honjozo soy sauce.
This is mentaiko grown in Itoshima that has been marinated slowly in mustard sauce.
