Kawara Soba is a specialty dish from Kawatana Onsen in Yamaguchi Prefecture. This set includes homemade noodles (dried green tea soba noodles) and dashi stock so you can enjoy the authentic taste at home. It can be easily made in a frying pan or on a hot plate.
The green tea soba noodles at Otafuku's Kawara Soba are made using only the precious center part of wheat flour, ensuring a soft, fluffy crust. The noodles are made with just the right balance of high-quality matcha, ensuring that the delicate flavor is neither too strong nor too weak when fried.

[How to eat]
Our original cha soba noodles are fried to a fragrant aroma on a hot iron tile (a frying pan or hot plate is also acceptable), and topped with beef, spring onions, soft-boiled eggs, lemon slices, seaweed, or grated maple leaves, depending on your preference. Enjoy by dipping it in our warm soba broth. You can also enjoy two different textures of cha soba noodles at once. The parts that touch the iron tile (hot plate) will be burnt, while the parts that don't will be smooth and delicious as cha soba noodles.
1. Add a pinch of salt to about 2 liters of boiling water, add 200g of green tea soba noodles, and boil for about 4 minutes.
② Transfer to a colander, rinse with cold water, tighten the noodles, and drain well.
3. Add a small amount of oil to a frying pan or hot plate and fry the noodles.
④ Heat the soba soup stock provided.
5. To make it even more delicious, add beef, green onions, shredded egg, lemon slices, seaweed, grated maple leaves, etc. to your liking.
⑥ Enjoy with warm soba soup stock.
